        The so-called Qianzhang is indeed the skim milk of soy. Taihe Qianzhang(太和千张) is renowned for its thinness, suppleness and fragrant taste. This is a specialty of Ezhou, which can be pruned in julienne before mixing it with sauce, and also can be fried or cooked. Local people usually cook it with fish from Liangzi Lake.
